A lot of work goes into preserving the raw milk's characteristics and taste specific to the herds raised in this area. The milk used in producing this cheese comes exclusively from the cheese makers' own livestock and their farms, including grazing fields, meadows and herds, are managed according to natural, ecological and environmentally friendly guidelines.
