For more than a decade, the master fromager affineur of La fromagerie Hamel, Ian Picard, takes care of the aging of cheeses he has carefully selected among Quebec and European fromagers. It is in the heart of aging cellars that cheeses will slowly transform into delicious wonders, unique to La fromagerie Hamel.

Inspired by his terroir, the master will choose different alcohol to wash the rind of his cheeses. Some will be caressed with marc, others with brown ale, or porto: the choices are infinite, one simply needs to perfectly master the art of ripening and, of course, to understand the taste and desires of his precious clientele.
