Deluxe Mac and Cheese
Makes 6 servings
2 1/2 cups uncooked macaroni
3 tablespoons of butter
3 tablespoons of flour
2 cups milk
150g grated Comtomme
150 g grated Comté
1/2 cup grated Parmigiano Reggiano
2 tablespoons of Moutarde de Bourgogne
Salt and pepper
1 cup Salsa de la Nonna or dices of freshly cut tomatoes
4 green onions, thinly sliced
1 cup Italian bread crumbs (optional)
Lightly cooked bacon (optional)
- Cook the macaroni the minimum time required. Rinse under cold water. Drain and place in a baking dish about 8 cups.
Preheat oven to 180 ° C (350 ° F).
In a large saucepan, melt the butter.
Add flour, stirring constantly.
When the mixture is smooth, add the milk, stirring constantly.
When the mixture is smooth and milk begins to fume, add Comtomme and Comté. Stir constantly until the cheese is melted.
- Add the Parmigiano Reggiano and Moutarde de Bourgogne. Stir.
- Add salt and pepper to taste.
Stir in the macaroni the mixture of cheeses, Salsa de la Nonna, green onions and bacon (optional). Equalize everything. Cover and bake in center of oven for 30 to 35 minutes or until the mixture boils. Sprinkle with breadcrumbs ten minutes before the end of cooking (optional).
Serve with a green salad and cipollini onions.
